I was watching "The River Wild" and saw the scene where David Straithairn's character is fighting underwater with Kevin Bacon's. In the scene, David essentially knocks Kevin out and pulls him out of the water. While they're not underwater for a long time, the entire swing was thrown underwater. I know I've seen similar scenes in other movies, but can't recall them off the top of my head. Is it possible to accually generate enough force through water to knock someone out?

You know, they may still have the Buster-Punching rig they used in one of the Shark week specials they could test this with.
On its own this might not be enough to fill a segment, but if they expanded testing to include kicks as well as punches or fighting underwater in general that might give them enough to work with.

While I can neither bust nor confirm the exact setup, I can - painfully - verify that it's perfectly possible to (inadvertantly) kick someone in the family jewels underwater with the knee...
And the result is the same as on dry land...
