I don’t think you can say it actually “eats“ radiation. It thrives on the radiation, but there is no less radiation after the fungus grows than there was before. That’s sort of like saying a plant “eats“ light in the photosynthesis process

Well light IS a type of radiation, so it makes sense.
What is basically going on here is that they are absorbing the radiation and converting it to something else. While this won't remove the original source and origin of radiation, it would remove the radiation or at least lower it away from the principle source.
This could have several major applications, including more effective treatments for radiation sickness and as a radiation 'shield'. Imagine being able to create a space habitat or craft who's hull is lined with material that will absorb some stellar radiation and convert it into something else; be that food, air or electricity. It wouldn't stop all the radiation, but could create 'shade' without the need for thick and heavy shielding both in space and even around nuclear reactors on Earth.
